Coconut Jelly Recipe
If the food has coconut, I will always buy and try; coconut cookie and coconut drink! All the bubble tea places always have coconut flavoured drinks. It is only coconut powder but I still love it.
What I love best is the coconut jelly from yumcha. That jelly is tasty, soft and yummy! But less yum cha places makes that dessert, which makes me sad.
To make that jelly you will need egg white, but I will get into that another day.
Today, I will show you a quick and easy coconut recipe. I like to put the mixture in a glass box, then cut it once set. You can also put it in cute moulds and then pop it out (please pop out with care!).
You can buy silicone mould online, like amazon.
You can also add food colouring if you want to add differet colours to it as well.
PREP TIME: 10 mins | FRIDGE TIME: 5 hours or overnight
- 200ml Water (room temperature)
- 180gm Caster sugar
- 4 Tbsp Gelatin Powder
- 400ml Coconut Milk or Cream
- 400ml Milk
- TOOLS: Silicone moulds
- Add 4 Tbsp gelatin powder in a small bowl, then add 200ml water. Stir the mix, then set aside and let the gelatin bloom.
- Turn stove to low.
- Add coconut cream/milk, (cow) milk and sugar in pot. (DO NOT OVER BOIL).
- Stir until sugar has dissolved.
- Add the gelatin into the pot and stir until dissolved.
- Scoop out the left over gelatin lumps and stir a few more times, then turn off the heat.
- Scoop the warm coconut mixture into the container/moulds.
- Put the container in the fridge for minimum 5 hours or overnight.
- Do not use coconut can, if it has the following ingredients: Stabilizer, emulsifie or thickener.
